Chicken and Rice Fry Recipe

Ingredients

1 tablespoon vegetable oil

1 onion, finely chopped

1 cup chicken broth

1 pound cooked chicken, cut into 1 inch cubes

1 (16 ounce) package frozen mixed vegetables, thawed

1/2 cup cooked rice

1 (8 ounce) package frozen corn kernels

1 (15 ounce) can whole kernel corn, drained

1 (10.75 ounce) can condensed cream of chicken soup

Directions

In a large skillet heat oil over medium heat. Saute onion and chicken until tender.

Stir broth into skillet and bring to a boil. Reduce heat and simmer till all ingredients are absorbed.

Add chicken cubes and mix well; cook and stir for about 30 minutes, or until chicken is cooked through. Add vegetables; mix thoroughly.

Add mixed vegetables and rice and stir; cook and stir for about 10 minutes. Add carrots, celery and onions and cook and stir for 20 minutes. Add chicken, mixed vegetables, corn, cream of chicken soup and chicken mixture. Reduce heat to medium.
