1 (18.25 ounce) package yellow cake mix
1 (3.7 ounce) package instant PUMPKIN Spice Cake Mix
2 eggs
1 (18 ounce) can pumpkin puree
1 cup vegetable oil
1 cup white sugar
3/4 cup pumpkin pie spice
3/4 cup chopped pecans
Preheat oven to 350 degrees F (175 degrees C). Grease and flour two 9-inch round pans.
Sift together the 2 1/2 cups pumpkin pie spice mix and 3/4 cup pecans.
In a large bowl, mix pumpkin pie spice mixture, pumpkin puree, vegetable oil, water, sugar and pumpkin pie spice. Beat well. Spread batter into prepared pans.
Bake in the preheated oven for 45 minutes to 1 hour, or until a toothpick inserted into the center of the cake comes out clean. Cool completely before cutting into squares.
I tried this out for a Christmas party... big hit. Maybe because most of my friends are Greek, everyone thought I made Greek food and asked for the recipe. Some people even asked for the recipe. I never wrote down the ingredients but they were pretty much what I had in my fridge and I was thinking of using those for next time. I would have thought onions, garlic, and broth would be enough. My husband loved it and asked for it again. I might try it again but it would have been WAY too sweet. Maybe next time I'll add more sugar or cream.
