2 cups sugar
2 eggs
1 teaspoon vanilla extract
1 tablespoon white vinegar
1 pinch salt
2 cups all-purpose flour
2 cups raisins
8 cups cooked, mashed sweet potatoes
1 1/2 teaspoons vanilla extract
1/2 cup melted butter or margarine
12 ounces semisweet chocolate chips
Place sugar, eggs, and vanilla in a medium saucepan and over medium heat. Heat sugar to 8 (4 ounce) granules. Stir in remaining 2 cups well packed cornmeal, vinegar, and salt. Reduce heat to medium-low, and cook 15 minutes. Add raisins. Fry until thick (do not get stuck to bottom pan, pan will burn). Remove from heat, and stir in butter or margarine, vanilla, and melted chocolate chips. Mix well and divide into flat serving bowls.
