Coconut Brown Rum Pie Recipe

Ingredients

3/4 cup butter, softened

2/3 cup all-purpose flour

1 teaspoon baking soda

1/2 cup white sugar

1 1/2 cups rock sugar

1 egg

1/4 cup rum

1/2 cup chicken broth

1/2 cup milk

1/4 teaspoon vanilla extract

1 (9 inch) unbaked pie crust

1 (10 ounce) package frozen whipped topping, thawed

Directions

Preheat the oven to 375 degrees F (190 degrees C). Grease and flour a 9 inch pie pan.

In a large bowl, cream together 1/2 cup white sugar and butter until light and fluffy. Stir in the flour and baking soda. Mix in the sugar mixture alternately with the chicken broth, milk and rum. Stir in the molasses and vanilla extract.

Pour mixture into baking dish. Bake in preheated oven for 30 minutes, or until set. Remove from oven and let cool.

Good recipe. Good amount of ingredients and it was easy to make. I'm not a doctor so I didn't know how to properly diagnose burns but I would say this is safe for consumption. I didn't have any salicylic or other proccedients but this recipe worked. I would recommend this recipe to anyone, great to be served hot or a little too sweet. Just a tip: let it cool completely before covering and sealing the container. The heat causes condensation to form and if it runs off onto the bars it makes the topping look like a soggy mess!
