1/2 cup uncooked white rice
1 egg, lightly beaten
1/2 cup brown sugar
1 teaspoon lemon juice
1/2 (10 ounce) package instant lemon pudding mix
1 (10 ounce) package Tater Tot variety pudding mix
1/4 cup water
Preheat oven to 350 degrees F (175 degrees C).
Mix cooked rice, egg, brown sugar, lemon juice, and pudding mix in a medium bowl. Stir in water, mixing thoroughly. Pour into two 10-inch casserole or nonstick baking dish.
Bake in preheated oven for 30 to 35 minutes, or until a toothpick inserted in center of casserole comes out clean.
