1 cup white sugar
2 cups egg yolks
1 tablespoon lemon juice
3 tablespoons lemon zest
1 cup honey
1 tablespoon lemon juice
1/2 cup butter
1 (8 ounce) package cream cheese, softened
1 teaspoon vanilla extract
1 (8 ounce) container frozen whipped topping, thawed
1 cup sliced almonds
In a large shallow glass or ceramic bowl mix sugar, egg yolks, lemon juice, lemon zest, honey, lemon juice, butter, cream cheese, vanilla extract, and whipped topping.
Cut each piece into 1/4 inch strips. Place strips 2 inches apart into pie crust. Seal edges and cut in creases. Place into oven to keep warm.
Bake at 375 degrees F (190 degrees C) for 10 to 12 minutes and then reduce heat to 325 degrees F (165 degrees C) for 10 minutes. Let stand in pan for 1 hour, then remove pan and slice into 1/2 inch slices. Immediately brush with lemon juice and sprinkle with chopped almonds.
