1 egg
1/2 cup vegetable oil
1 cup mayonnaise
1 pound skinless, boneless chicken breast halves
1 (10 ounce) can diced green chilies, drained
2 tablespoons cornstarch
1/2 teaspoon salt
1/2 teaspoon white sugar
2 cups chicken broth
1/4 cup dry cornbread mix
Preheat oven to 350 degrees F (175 degrees C).
In a medium bowl, mix egg, oil, mayonnaise, chicken, and green chilies. Mix thoroughly. Spread mixture into a 9 inch square baking dish.
Bake in preheated oven for 10 to 12 minutes. Remove foil. Allow to cool.
Pour broth, cornbread mix, and cornbread mixture over chicken,
Bake for an additional 20 minutes. Top with cooked cornbread mixture.
