1/2 cup butter
2 cups brown sugar
1 cup packed brown sugar
1 egg
1 teaspoon vanilla extract
2 cups all-purpose flour
1 tablespoon baking soda
1 teaspoon baking powder
1 teaspoon salt
1 cup rolled oats
In a medium bowl, cream together butter and sugar. Beat in the egg and vanilla. Combine the flour, baking soda, baking powder, salt and oats. Mix well. Roll into 1 inch balls. Place one 1/2 inch away from one another. Place the cookies 1 inch apart onto ungreased cookie sheets.
Bake for 15 to 18 minutes in the preheated oven, but do not overbake. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.
