1 pound boneless pork loin roast
2 tablespoons vegetable oil
4 potatoes, peeled and cubed
2 tablespoons brown sugar
1 teaspoon salt
1 teaspoon paprika
salt-free lemon-lime flavored pepper to taste
Heat vegetable oil in a large skillet over medium heat. Cook pork thoroughly.
Heat oil in skillet until hot. Stir in potatoes and brown sugar , reduce to medium-high heat. Stir in salt and paprika . Bring to a simmer over medium-low heat, stirring occasionally.
Reduce heat and add the vegetables the potatoes and vinaigrette mix. Toss to coat.
Reduce heat to low, and heat to low then low again.
Heat remaining oil in skillet into low; cook pork until thoroughly browned. Transfer to large serving bowls.
