1 cup finely chopped apples
1 cup boiling water
1/4 cup maple syrup
1/4 cup white sugar
1/2 teaspoon vanilla extract
1 cup butter, softened
3 tablespoons brown sugar
1 teaspoon lemon zest
1 teaspoon lemon juice
2 tablespoons lemon zest
1/2 teaspoon salt
1 cup margarine, melted
1 cup white sugar

1 cup all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1 cup margarine, melted
Preheat oven, 375 degrees F. Grease and flour two 9-inch pie pans.
In a large bowl, mix apples, boiling water, maple syrup, sugar, lemon zest, lemon juice, lemon zest, lemon juice, salt, margarine, brown sugar and lemon zest. Mix well.
Pour mixture into prepared pan. Bake in preheated oven for 1 hour, or until apples are tender and lightly browned. Let cool before cutting into squares. Chill pie in refrigerator. Serve at room temperature.
