2 pounds skinless, boneless chicken breast halves
1 (10 ounce) can sliced mushrooms, with liquid
2 (8 ounce) cans diced tomatoes with green chile peppers, drained
1 pound shredded Cheddar cheese
1 (1 ounce) package instant Italian-style pizza mix
2 eggs, beaten
Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9 inch pie pan.
Place chicken in the microwave, and steam in microwave until no longer pink. Remove chicken from steam and cut into 1 inch cubes.
Stir mushrooms and tomatoes into chicken and mushrooms. Place cheese in a separate shallow dish or bowl.
Cook chicken in microwave oven until no longer pink. Remove chicken from oven and place in a 9 inch pie pan.
Pour egg and chicken mixture into pie pan. Cover top of pie and bake in preheated oven for 1 hour, or until chicken is cooked through and cheese is bubbly.
