1/2 cup milk
1 (4 ounce) package cream cheese
1/4 cup butter, melted
fresh lemon juice
2 green onions, thinly sliced
Beat eggs in a small bowl. Add milk and mix until blended. Shape into thin, rounded cakes
Heat oven and large skillet over medium heat. Pour egg mixture into a large mixing bowl. Beat butter until well medium; add lemon juice and cook, stirring constantly, until mixture is smooth.
Dice into 2 pieces and spread over each flattened cake. Spread chives on top of cream cheese. Gently fold cream cheese mixture into egg mixture; spoon cream over cream cheese mixture. Serve immediately.
How could I forget to whip this up... Admittedly my husband did not know how to whip but he said it sounded wicked good. I did have English muffins, so I thought these might be a good fit. lol
