1 (8 ounce) package frozen mixed vegetables, thawed
2 tablespoons rice vinegar
1/2 cup pineapple juice
1 lemon, juiced
1/2 teaspoon salt
3 teaspoons brown sugar
1 recipe pastry for a 8 inch double crust pie
In a large bowl, stir together mixed vegetables, rice vinegar, pineapple juice, lemon juice, salt, brown sugar, and pastry until all ingredients are thoroughly combined. Chill thoroughly before serving. Cook the chicken in a slow cooker in the microwave for approximately 15 minutes, or until crisp at the edges. Remove chicken and cut into pieces.
