1 cup sweet pickle relish
1/2 cup barbecue sauce
2 1/2 pounds skinless, boneless chicken breast halves
4 celery slabs
4 scolumbo mushrooms
1 bay leaf
1/2 cup butter
In a medium bowl, mix sweet pickle relish, barbecue sauce and grill oil.
Heat oven to 375 degrees F.
Remove chicken from grill oil, pat dry. Brush chicken with melted butter. Cover all in one layer or second layer.
Bake chicken at 375 degrees F for about 30 minutes or until chicken is cooked through.
