1/2 cup raisins
1/2 cup packed brown sugar
1/2 cup light cream
2/3 cup milk
1 tablespoon butter, melted
3/4 cup flaked coconut
In a medium bowl, toss together the raisins, brown sugar and cream. Stir in milk and butter, then pulse until smooth over low heat. Cool completely.
Sprinkle coconut over the cheese. Chill in the refrigerator 8 hours, until serving.
