1 1/8 quarts apricot preserves
1 tablespoon brandy
2 tablespoons white rum
1 teaspoon lemon juice
2 tablespoons vodka
3 tablespoons mayonnaise
1 (9 inch) unbaked pie center round
In a large pitcher, blend apricot preserves, lemon juice, vodka and mayonnaise.
In a small bowl, mix the brandy extract and lemon juice because whisking mixture would add too much to the recipe. Spread half of it onto the center of the pie crust before spreading remaining half of fruit on top. Press remaining peach filling onto bottom and top of pie.
Press remaining peach filling onto bottom of pie along with remaining fruit jam.
