1/2 cup uncooked white rice
3 cups white sugar
1 (6 ounce) can evaporated milk
1 teaspoon baking powder
1/2 teaspoon salt
1 tablespoon ground nutmeg
2 cups chopped celery
2 1/2 cups shredded Swiss cheese
Preheat oven to 350 degrees F (175 degrees C).
In a large bowl, combine rice, sugar, milk, baking powder, salt, nutmeg and celery. Stir to coat.
Press a teaspoon of the mixture into each serving bowl.
Bake at 350 degrees F (175 degrees C) for 30 minutes, or until the top of the puddings begin to brown. Cool completely.
