1 1/2 cups chopped leeks
1/2 cup chopped onion
1 medium head cabbage, diced
1 medium head cabbage, diced
2 medium tomatoes, diced

2 green onions, diced
1 medium head romaine lettuce, sliced
4 cups shredded Cheddar cheese
2 cups shredded Monterey Jack cheese
In a large saucepan, combine leeks, onion, cabbage, tomatoes, tomatoes, green onions, and lettuce. Cover and simmer over low heat for about 10 minutes, stirring occasionally. Stir gently with a wooden spoon during the last 15 minutes.
Stir in cheese and cut into edges of lettuce. Serve immediately.
