Stuffed Corn with Bacon Recipe

Ingredients

4 slices bacon

1/2 pound corn tortilla chips

1/2 pound shredded Cheddar cheese

Directions

Place bacon in a large, deep skillet. Cook over medium high heat until crisp. Drain, crumble, and set aside.

Place all of the corn tortilla chips in a large microwave oven-safe bowl. Microwave 10 to 15 minutes, until lightly heated. Drain, crumble, and set aside.

While the chips are microwaving, chop the bacon and slice into thick strips. Place one side of each strip onto the bottom half of the corn tortilla chipd; spoon about 1/3 of the bacon grease over the chips.

Fry the corn tortilla chips in microwave's medium non-stick microwave-safe bowl. Place a strip of bacon over the chips before tossing with the remaining stuffing. When the bacon strips are crisp, punch down and reserve for another use.

Spread 1/3 of the stuffing on top of the stuffed, bacon-side up, and place the bacon strip on top. Sprinkle with cheese, if desired, and top with cheese sandwich.
