I really like this basic recipe. I butterflied my pork chops and roasted them until crisp in the cavity before adding them to the flavorful dressing. I let them marinate in the dressing for about 24 hours and then added a little salt, pepper, and a little twist. I felt they needed a little salt to be safe to eat but they were super delish and delicious. Note that you don't really get a lot of flavor from just cooking them. Some reviewers said they felt the meat was dry. I measured out at 1/2 tsp. of salt and 1/2 tsp. of dried tarragon. This is really good--very mild and tasty. I will make this again.
