1 (9 inch) pie crust
2 (3 ounce) packages instant vanilla pudding mix
1 (8 ounce) can crushed pineapple, drained
1 (3 ounce) package fruit flavored Jell-O mix
1 (3 ounce) package instant whipped topping mix
Preheat oven to 350 degrees F (175 degrees C). Spread pie crusts with pudding mix.
In a large bowl, mix pudding mix and pineapple juice.
Whip whipped topping into a small saucepan. Cream egg whites and whisk into pineapple mixture.
Spread pie crusts on an ungreased cookie sheet.
Bake in preheated oven for 40 minutes, or until custard is set and toothpicks are lightly browned. Reduce heat to 350 degrees F (175 degrees C).
I have a recipe from which I am constantly tweaking it. If I liked it, I made it again--trendy and easy. If I didn't like it, I didn't make it. Either way, I would have made it again--and probably made it worse--so good!
