1/2 cup butter
1 cup honey
1 teaspoon vanilla extract
2 eggs
1 cup all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 cup semisweet chocolate chips
1 cup all-purpose flour
1/4 cup butter, softened
2 teaspoons instant coffee powder
Preheat oven to 375 degrees F (190 degrees C). Grease 12 muffin cups or line with paper muffin liners.
Beat butter, honey and vanilla in small mixer bowl until smooth. Stir eggs, flour, baking powder and baking soda into butter mixture, mixing just until incorporated. Stir milk, butter mixture, flour, chocolate chips, flour, coffee powder and vanilla into muffin cups.
Bake in preheated oven until slightly browned, about 30 minutes. Serve warm while still warm.
