3 cups lettuce - torn, washed, dried, trimmed and chopped
3/4 cup chopped spinach
3/4 cup chopped montmorillon
4 eggs, beaten
2 yellow onions, chopped
2 crispy tortilla strips
sliced green onions, for garnish
salt and white pepper to taste
1 (6 ounce) jar salsa
1 cup shredded Cheddar cheese
4 (8 inch) flour tortillas
Preheat oven to 350 degrees F (175 degrees C). Spray a baking sheet with non-stick cooking spray. Drizzle lettuce and spinach over tortillas, and sprinkle with salt and pepper.
Spread corn oil on marbled tortillas. Layer with 1/2 a lime, 1/2 a green onion, 1/2 a slice of Cheddar cheese (if desired), 1 onion, and 1/3 a cup of water. Top with more lettuce, while still putting half way down, sprinkle with salt and pepper. Spread with remaining cheese, onion and water.
Bake 25 to 30 minutes, or until center is firm and cheese is melted. Cool before serving.
