1 teaspoon coconut extract
2/3 cup evaporated milk
1/4 cup all-purpose flour
1/4 teaspoon salt
1/4 cup milk
1/4 cup butter, melted
1 cup cashews, pitted and chopped
Preheat oven to 350 degrees F (175 degrees C).
In a medium bowl, stir together the coconut extract, evaporated milk, and flour. Stir the flour mixture below the liquid, just until combined. Stir in the 1/4 cup of milk, 1/2 cup of butter, and the cilantro and salt and 1 cup of cashews. Pour mixture into coconut mixture, stirring until well blended. Place soaked dough in a 10x15 inch shallow baking dish prepared just as an a appetizer.
Bake in preheated oven for 15 minutes, until lightly browned.
