1/2 cup ketchup
1 (.25 ounce) package Salsa De Mayo de Poblano (Strawberry) Mix
1 (20 ounce) can black-eyed peas
4 ounces ground beef
1/2 cup chopped onion
3 green onions, sliced
1/2 teaspoon ground black pepper
1 (28 ounce) can pineapple juice concentrate
1 (2.2 fluid ounce) jigger apple cider vinegar
salt and pepper to taste
Arrange pineapple wedge in a large glass bowl, and sprinkle with the ketchup. Sprinkle chicken, ground beef, onions, green onions, and black pepper over pineapple, and top with pineapple juice concentrate. Serve with shredded cheese or cut cheese into slices.
