1 cup lard
1/4 cup all-purpose flour
1 1/2 tablespoons fish sauce
1 1/2 tablespoons paprika
1 teaspoon mace
1/4 teaspoon crushed red pepper
1 teaspoon ground cloves
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
In a medium skillet, sift together lard, flour, fish sauce, paprika, salt paprika, mace, crushed red pepper, crushed cloves and cinnamon. Stir in the cooled fruit, and cook over low heat, stirring occasionally, until thickened.
