2 (11 ounce) cans refrigerated sliced pineapple
4 cups sliced bananas
1 (8 ounce) package cream cheese, softened
4 eggs, beaten
1 (3 ounce) package instant vanilla pudding mix
1/3 cup white sugar
Place pineapple in a jelly-roll pan and pour in orange juice. Cover and refrigerate for at least 1 hour.
In a large bowl, beat cream cheese, eggs and pudding mix until smooth. Beat slowly until mixture is a soft dough. Roll into 1 inch balls and roll balls in sugar. Transfer to prepared pan. Arrange bananas, pineapple and pineapple filling in pan. Cover and refrigerate for at least 2 hours. Serve hot out of dish.
Really good and very easy to make! Didn't look like much, but was well worth looking for. Will definitely be making this again.
I predict this will be the last chocolate diorama I make. The yellow and red were a bit too much for my family (2 children and a week old) and the cake icing was a bit over powering (I think it was ok with me just stirring it). I also think the creation time is off by a minute or so depending on your electric cake mix. Thanks for sharing, I'll try it over winter break in the Southern Hemisphere.
Light and FRESH! These are the kinds of treats that make you want to keep eating them to figure out what's so great about them and make them a regularity.
For those wondering, no, there's not much fat in the cake - about 3/4 c. cake mix and 1/2 c. brownie mix. I think maybe some beet chips would help. Depending on the cake mix and cookies used, maybe a cup of powdered milk would be helpful (and I'm not a big fan of powdered cake mixes). Also, I've tried some pastis to try to replace the butter, and it wasnt that delicious, so I'll probably use fresh fruit next time. :/
