1 (9 inch) prepared graham cracker crust
1 cup whipping cream
3/4 cup white sugar
3 eggs
3/4 cup vegetable oil
3 tablespoons lemon juice
1 teaspoon vanilla extract
1 teaspoon lemon zest
3 cups crushed Pecan-Nut Cookies
Preheat oven to 375 degrees F (190 degrees C). Spray a medium baking sheet with nonstick spray spray.
In a large bowl, whip cream until stiff peaks form. Place cream in small bowl over medium heat. Beat in sugar. Beat in eggs, oil, lemon juice and vanilla. Mix the crushed cookies with the topping soda until blended. Pour filling into prepared crust.
Bake for 30 to 40 minutes in the preheated oven. Serve warm or cold, or chill crust well.
