1/2 cup all-purpose flour
1 tablespoon baking powder
1/2 teaspoon ground nutmeg
1 teaspoon vanilla extract
1/2 cup butter, softened
1 cup honey
1/2 cup water
1 (3 ounce) package orange flavored Jell-O mix
3 eggs, beaten
1 cup boiling water
2 teaspoons vanilla extract
1 cup chopped pecans
Preheat oven to 375 degrees F (190 degrees C). Grease and flour 3 9 inch round pans. Set aside.
In a large bowl, mix the flour, baking powder, nutmeg and vanilla extract. Spread into bottom of the prepared pans.
Bake in the preheated oven for 50 minutes or until a toothpick inserted into the center of the cake comes out clean. While still warm, pour the lemon/lime flavored Jell-O mix into a container and microwave on high for 2 minutes, or until gelatin has formed. Pour the boiling water over the cake and sprinkle with pecans. Cool cake completely. Cut into squares.
