1 small onion, diced
1 small celery, diced
1 large carrot, peeled and sliced
1 teaspoon salt
1 cup water
4 (2 to 3 pound) loin steaks
Combine onion, celery, carrot and salt. Bring to a boil. Reduce heat to medium-low. Cook, stirring, for 2 minutes. Stir in water and carrot mixture. Boil, stirring constantly, for 3 minutes. Stir in carrots and salt. Reduce heat to low.
Spoon mixture onto loin steaks. Roast in the preheated oven 10 minutes. Drain steaks on paper towels. Serve steaks with sliced carrots.
