1 cup warm water
1 cup barley mash
2 onions, cut into 1/4 inch slices
3 cups liquid water
2 teaspoons fish sauce
2 teaspoons vinegar
1 cup vodka
In a large saucepan or stockpot, bring water to a boil. Add barley
Saute onions and saute until translucent; remove from heat. Add 10 cups water to barley mash. Bring to a boil and then stir in 2 cups liquid water. Bring to a boil and boil until barley is tender, remove from heat and stir in vinegar and vodka. Let bubbles rise for 5 minutes.
Remove barley from brine mix. Add barley mash, onion slices, liquid water, fish sauce and vinegar. Bring to a simmer, stirring well occasionally, until mixture thickens. Remove from heat; stir in vodka. Chill in refrigerator.
Prepare Lamb by getting baste in on both ends of a long 4 inch tube of 8 inch foils leading into the tube. Place lamb into the tube.
