1 cup melted butter
1 cup canola oil
4 skinless, boneless chicken breast halves - cut into cubes
6 slices bread
Rub melted butter in bottom of 5x12 inch baking dish.
Place chicken cubes in sealed foil and heat butter in large skillet over medium heat.
Eventually chicken will turn slightly pink on both sides. Cover and cook for 2 to 3 minutes per side. Remove chicken from pan. Brush butter and oil evenly with marinade and set aside.
Place bread cubes in bottom of dish. Cook chicken in preheated oven of preheated broiler pan 1 to 2 minutes or until lightly browned - drain and set aside.
Heat remaining butter and oil in large skillet over medium heat. Ight to light, sprinkle chicken with bread cube before turning. Cook until golden brown, about 10 minutes. Drain and brush the pan with marinade mixture.
