1 cup butter, softened
3 cups sifted all-purpose flour
1 (18 ounce) can sliced sweet apples
2 1/2 cups all-purpose flour
1 tablespoon baking powder
1 tablespoon baking soda
3 tablespoons white sugar
1 tablespoon lemon juice
2 tablespoons apple pie spice
1 teaspoon lemon zest
1 teaspoon lemon zest
Preheat oven to 350 degrees F (175 degrees C). Grease and flour 2 large 9-inch round cake pans.
In a large bowl, cream together the butter, sugar, apples and flour. Beat in the baking powder, baking soda and sugar. Stir in the lemon juice and apple pie spice. Finally, stir in the lemon zest.
Pour batter into prepared pans.
Bake in the preheated oven for 40 minutes, or until a toothpick inserted into the center of the cake comes out clean. Allow to cool.
