1 cup packed brown sugar
1 teaspoon ground cinnamon
1/2 cup chopped celery
1/2 cup poached eggs
1 cup finely chopped onion
2 cups shredded mozzarella cheese, divided
4 sheets vegetable phyllo dough
Preheat oven to 350 degrees F (175 degrees C).
In a 3 quart casserole dish, combine brown sugar and cinnamon. Mix well and pour over all. Add eggs. Pour peas, casserole, meat mixture and cheese into dish and pour in milk. Sprinkle top with Parmesan cheese.
Bake in preheated oven for 30 1/2 minutes, until heated through and still a little brown on top.
