Lemon Burger Recipe

Ingredients

1 large carrot, bruised

1 medium onion, diced

1 medium onion, coarsely chopped

1 medium carrot, finely chopped

1 medium red onion, chopped

1 medium green bell pepper, diced

1 medium yellow bell pepper, diced

1 medium yellow squash, diced

Directions

Preheat grill over medium heat.

Cut carrots into 1 inch slices and place in the center of each grill. Add onion slices and red onion slices around carrot and onion body. Add green pepper to the center of each grill.

Heat grill with charcoal lighter. Sprinkle with shallots, carrots and green peppers. Cook over medium heat about 15 minutes, turning over every 15 minutes. Serve burgers on the side.

I added frozen veggies, a spreadable serrano sauce, and serrano chili flakes. I did not have any corn. I think I would prefer to have the chipotle flavor, but I was very happy with the plain old chile. I used Quest's Chipotle Chile Pepper powder. I actually made a sort of quiche with it, but it would have been SO much more delicious if I had made the whole thing. This was super quick and easy. My son loves pisco and he wanted to try it.... SO REWARDING!!!!
