Best Corn Muffins Recipe

Ingredients

1 cup cooked buttery round crackers, cut into 1 inch cubes

1 1/2 cups whole milk

3/4 cup all-purpose flour

1/4 teaspoon baking powder

1 teaspoon ground nutmeg

3/4 cup brown sugar

6 egg whites

1 teaspoon vanilla extract

3/4 cup white sugar for frosting

Directions

Preheat oven to 350 degrees F (175 degrees C). Grease and flour 2 muffin pans.

In a large bowl, mix buttery round crackers, whole milk, flour, baking powder, nutmeg and brown sugar. Pass into prepared muffin cups.

Bake 12 to 15 minutes or until toothpick inserted in center comes out clean. Cool, stretch muffins around edges and pinch edges of muffins. Frost with frosting using an electric pastry blender or toothpicks.
