2 tablespoons olive oil
1 onion, diced
2 (16 ounce) cans minced clams, drained
1 tablespoon minced garlic
1 green bell pepper, diced
1/2 teaspoon dried thyme
1 cup fresh parsley
1 dash ground nutmeg
3 tablespoons lemon juice (optional)
1 pinch ground black pepper
2 (8.5 ounce) cans crushed cornflakes cereal
2 tablespoons water
1 (14 ounce) can whole peeled tomatoes, with liquid
Heat olive oil in a large skillet over a low heat. Saute onion, garlic, chopped green pepper, thyme and parsley for about 10 minutes, stirring occasionally. Stir in Italian seasoning, lemon juice and pepper.
Pour in water, tomatoes, cornflakes cereal and water. Bring to a slow boil. Reduce heat to medium-low. Gradually cook until mixture coats the back of a glass spoon, about 5 minutes. Remove from heat; stir in tomatoes with liquid.
