1 cup margarine
1 cup packed light brown sugar
1 egg
1 1/2 cups pureed banana
1 1/2 cups packed sweetened condensed milk
1 cup peanut butter
1 cup milk
1 cup chopped pecans
Preheat the oven to 350 degrees F (175 degrees C). Place the margarine and brown sugar in a medium saucepan. Heat the egg and sugar over medium heat, stirring constantly, until the sugar has dissolved and mixture has thickened slightly. Remove from heat and use to whip the mixture together. Beat in the bananas and sweetened condensed milk. Beat in the peanut butter and milk, mixing just until. Transfer to the prepared cookie sheet.
Bake for 8 to 12 minutes in the preheated oven. Cool completely on wire rack. Roll the cookies out on waxed paper to 1/4 inch in thickness. Drizzle with strawberry glaze. Refrigerate until set. Serve warm.
