3 tablespoons olive oil
6 (8 ounce) pita breads
2 eggs, beaten
1/4 cup all-purpose flour
3 tablespoons lemon juice
1 tablespoon dry mustard
1 teaspoon paprika
1/4 teaspoon garlic powder
1/2 teaspoon chili powder
1 teaspoon salt
3/4 cup grated Parmesan cheese
Preheat oven to 350 degrees F (175 degrees C).
Heat olive oil in a wok/stick pan over medium heat. Add bread slices; cook for about 2 minutes, stirring often. Keep stirring. Add eggs, 2 tablespoons flour, lemon juice, dry mustard, paprika, garlic powder, chili powder and salt. Mix all together thoroughly.
Place pita into shallow baking dish, then pour egg mixture all over bread slices. Bake uncovered for 5 minutes.
