6 large marshmallows
1 cup shortening
1 cup boiling water
1 (6 ounce) can crushed pineapple with juice
Preheatthe oven to 350 degrees F (175 degrees C).
In a medium bowl, mix marshmallows, shortening, and boiling water. Beat with an electric mixer attachment for 3 minutes.
Stir the pineapple into the batter with the lemon zest. Place the cookies onto a cookie sheet.
Bake for 15 to 17 minutes in the preheated oven. Do not allow cookies to brown. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.
