1 1/2 cups vegetable oil
1 pound red bell pepper
2 cloves garlic, chopped
1/2 pound Spanish onion, sliced
1/2 cup hot dog spread
1 (8 ounce) packet frozen chopped spinach
1 cup fat free Italian-style dressing
2 cups shredded mozzarella cheese
1/8 cup sour cream
1 (8 ounce) package shredded Monterey Jack cheese
Heat oil in a large skillet over medium heat. Saute red pepper and garlic in oil until fragrant; set aside. Stir in onion and hot dog spread -- cooking and stirring once -- until all ingredients are well coated and coats well with cooking spray.
Warm spinach in microwave oven, stirring occasionally, until wilted. Add Italian dressing, Monterey Jack cheese, and sour cream; stir until well blended. Cook over medium heat, stirring as needed, until cheese has melted. Stir until everything is evenly coated.
