Hot French Toast II Recipe

Ingredients

1 tablespoon butter

8 slices bacon, cut in 1 inch cubes

6 slices ham, cut in 4 slices

4 eggs

1 tablespoon bourbon

1 tablespoon water

1 cup chopped onions

1 cup chopped green bell pepper

Directions

Preheat oven to 350 degrees F (175 degrees C).

To Make Toast: Melt butter in 9-inch skillet. Mix bacon and ham in pan. Cook over low heat, stirring occasionally, until bacon is crisp. Remove from heat. Stir in eggs, stir gently, half way through cooking.

Stir in bourbon, water, and chopped onions. Pour mixture over bacon and ham slices. Sprinkle topping over toast, cover, and bake for 45 minutes.

Bake, uncovered, for 45 min in the preheated oven. Immediately remove pan from oven and let cool completely. Brush top with remaining bourbon and top with green pepper.

I have no idea why more people haven't reviewed this but...I think it must be because the first time I made it I mixed the brown sugar and cocoa powder with the eggs, butter and brown sugar-I believe it made a very light cupcake i then baked. This time I put the brown sugar and cocoa powder in my food processor for a few seconds, it processed the cakey goodness and formed small balls. I've seen photos posted of this cupcake but did not have the cakey quality of the first time. Perhaps the cocoa powder/egg mixture had more baking cocoa and I/O time. I am not sure. Either way it was great and I will make it again. I put in my electric mixer which made quick work of this - just bake it in two batches to assure even baking.

This was very good - the addition of tiny fresh tomatoes made this a possibility, but I didn't t... I might do it tomorrow, eh? Other than that, I made it as directed.
