1 pound potatoes

1 1/2 cups brown sugar
3 cups chicken broth
2 bay leaves

8 cups water
In a large pot, combine potatoes, onion, water, celery, thyme, brown sugar, chicken broth, bay leaves, garlic, lemon juice, paprika, vinegar, and water. Bring to a boil. Reduce heat, cover, and simmer for 20 to 30 minutes.
