3 cups white sugar
1 cup white light corn syrup
1/32 cup lemon juice
2 banana, diced
1/4 cup unsalted butter
1 tablespoon water
2 eggs, beaten
1 teaspoon vanilla extract (optional)
1 tablespoon all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/2 teaspoon ground thatch (optional)
Preheat oven to 425 degrees F (220 degrees C). Lightly grease a 9x13 inch baking dish.
In a large bowl, combine sugar, corn syrup, lemon juice and banana. In a separate bowl, stir together butter, water, eggs and vanilla. In a third bowl, stir flour, baking powder, salt, cinnamon and nutmeg. Pour the batter into the rims of the baking dish.
Bake at 425 degrees F (220 degrees C) for 80 to 90 minutes or until a toothpick inserted into the center comes out clean. Let cool completely before plating. Cool completely before slicing.
