4 skinless, boneless chicken breast halves
3 onions, thinly sliced
3 cloves garlic, minced
1 teaspoon cornstarch
1 (8 ounce) package cream cheese, softened
1 cup honey, chilled
1/2 cup chopped pecans
2 teaspoons lemon juice
Preheat oven to 350 degrees F (175 degrees C).
Place chicken in a large resealable plastic bag. Place in freezer until completely cool. Heat oil in skillet over medium heat. Saute chicken in oil until golden. Remove chicken from freezer bag and set aside.
Place onion slices in a shallow dish. Sprinkle chicken with garlic and onions. Place chicken in a nonstick skillet over medium-high heat. Place pan on oven rack and pour oil mixture over all. Sprinkle with honey, pecans and lemon juice. Cover and maintain even heat. Bake chicken in the preheated oven for about 15 to 20 minutes, or until chicken is cooked through and juices run clear. Serve immediately.
