1 (16 ounce) can yellow cornmeal
1 tablespoon butter, softened
1 (4 ounce) jar frozen yellow corn muffins
1 onion, chopped
2 slices bacon
1 tablespoon shredded Monterey Jack cheese
6 pancakes
Preheat oven to 350 degrees F (175 degrees C). Spray a 9x13 inch pan lightly with cooking spray. Melt butter in a medium saucepan over medium high heat. Spread half of muffins on both sides of the pan. Place a half of onion onto each muffin; sprinkle bacon on top. Spoon half of the sausage into the bottom of each pan. Spoon half of the cheese over the muffins. Spread the bacon over the sausage. Place pancakes on top of the sausage. Spread half of the cornmeal over the turkey and sausage. Place on foil-lined baking sheets.
Bake at 350 degrees F (175 degrees C) for 20 minutes. Remove foil and open pans to let cool slightly.
