Peach Cheese Casserole Recipe

Ingredients

2 cups cornmeal

1 (8 ounce) package shelled dorner or peaches, pitted and halved

1 (2 ounce) package cream cheese, softened

1 (8 ounce) can crushed pineapple, drained

8 cups sliced peaches, pitted

4 bananas - peeled, cored and diced

Directions

Preheat oven to 350 degrees F (175 degrees C). Pour some boiling water into a medium saucepan; bring to a partial boil. Simmer stirring constantly for 1 minute.

Add cornmeal to boiling water and cook, stirring constantly, until mixture dissolved. Stirring constantly, allow mixture to thicken 5 to 10 minutes. Fill half (1 1/2) of the bottom of a 9x13 inch baking dish with peaches.

Place the peaches in the center of a large sheet of foil. Cover the peaches with ice. Sprinkle the crushed peaches over ice. Drizzle with remaining cranberry mixture. Top with banana slices.

Bake uncovered in the preheated oven for 30 minutes.

This barely tasted yummy and pretty good compared to other attempts I've made. I just never got around the "yummy Greek salad" comparison. OR maybe I was just used to the overpowering onion taste. Still, well worth trying.
