1 cup brown sugar
3/4 cup all-purpose flour
1 1/2 teaspoons vanilla extract
2 eggs
1 cup butter, melted
1 pinch salt
1 teaspoon vanilla extract
1 teaspoon baking soda
1/2 teaspoon baking powder
1 teaspoon pumpkin pie spice
1 teaspoon baking soda
1/4 cup lemon juice
Preheat oven to 350 degrees F (175 degrees C). In a large bowl, combine brown sugar, flour, vanilla extract, eggs, melted butter, salt, cinnamon, baking soda, baking powder and pumpkin pie spice. Mix well. Roll dough into 1-inch balls and roll each ball in lemon juice to coat. Place cookies 2 inches apart onto ungreased cookie sheets.
Bake for 8 to 10 minutes in the preheated oven, until edges begin to brown and the tops begin to crack. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.
