2 cups kielbasa or Polish sausage, cut into 1 inch pieces
1/4 cup olive oil
2 pounds wild rice
1 pound prosciutto, thinly sliced
1 tablespoon minced garlic
1 pound French baguette, cut into 6 wedges
1 pound shredded Swiss cheese
1 cup ricotta cheese
1/2 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon dried oregano
4 tablespoons white sugar
1/2 teaspoon ground nutmeg
In a small saucepan, warm olive oil and cook sausage until browned. Remove from pan and drain. Reserve.
Heat remaining olive oil in a small saucepan, and saute wild rice for 15 minutes. Season with garlic and Swiss cheese over medium heat. Boil for 1 minute, stirring occasionally.
Stir in sausage, olive oil, prosciutto, and garlic. Mash gently with a wooden spoon or spoonfuls of rice mixture until smooth.
