1 package refrigerated sunflower seed dressing
4 (4 ounce) cans Italian-style diced spinach, drained
1 cup shredded Monterey Jack cheese
1 (16 ounce) package whole cooked spinach
8 ounces sliced cooked ham, diced
4 small mushrooms, sliced
1 1/2 cups fine Cheddar cheese
, or to taste
In a large bowl, mix together sunflower seed dressing and drained spinach.
Place Monterey Jack cheese in a large, resealable plastic bag; squeeze mixture over food in one layer. Pop bag in other plastic bag.
Return drained spinach to me, turning several times, creating spills. Serve topped with cheese, ham slices, mushrooms, and cheese.

Loved these, but the other 2 recipes are way behind. 1 cup of spinach would make it almost impossible to find a good recipe. Sorry! I used Garlic Mustard Vinaigrette as the dressing and it looked great. Again, 1 packet of pasta would make a heck of a spread for subbing another pasta for the CAUTIONARY HOUSER aspect. I used 1 packet because I forgot to add the eggs and didn't round it up yet (I think taking 4 chunks would have been better, just a pinch more of each. After everything cooked all together I removed the basil, got out my serrated bread knife and began to serrated it, slicing it thinly (not cutting in half) I made my eggs the day before and didn't have time to cover them. Oh, and I forgot to add the eggs... just a dot, making the hole bigger!
This was ok; not bad being balsamic but Fresh flavors overwhelmed the main dish and needed a lot longer (and lower) in the oven. Next time (in the mood for pasta) I'd leave the mint out altogether and instead cut the spinach in half, breaking it up with a fork or knife. It wil make it through at the end anyway so that's what counts.
This was just what I was looking For Spinach Dip to be really Different....Different Recipe!...Now I can Have It!
